Consistency is the key! Carlos Fernandez Morera placed 3rd in the Costa Rica COE 2016. This year for 2017, a new farm was entered. As the name suggests, El Diamante (The Diamond) shines bright amongst the competition. This lot placed an incredible 4th to remain in the top 5 for the second year running. We loved Carlos’ coffee that much we secured this lot to bring you back that unique taste profile you love so much! Why does it taste like this? It’s the science behind the coffee. The anaerobic fermentation process (eliminating oxygen) generates this cup profile. This involves de-pulping the cherry, adding back mucilage (the sticky flesh) a hint of water and placing it in a hermetically sealed container. This container is airtight, excluding the air and oxygen during fermentation. What this does is increase the flavours present in the mucilage and transfers to the core of the bean. So there we have it, a recipe for success!
