About Cool Beans:
The Cool Beans project was born out of frustration. Far too often, when traveling to origin, we’ve fallen in love with an exceptional coffee - only for it to fall short once it arrives. Coffee is just like any fruit or vegetables that you find at the grocery store, if it’s taken care of during transport, it’ll still taste delicious when it arrives. Shipping often lets us down.
It’s out of this, that the Cool Beans project was born. The idea, simply, is to make sure the coffee never gets hot - from the farm all the way to your local cafe or your kitchen counter. To treat the coffee with the respect that it deserves, at every stage of its journey. After 10 years of ideas, discussions, theories, and some dreams - we found a like-minded soul that didn’t think we were crazy. Franz, our friend from Lost Origin in Panama, loved the idea and was eager to test it out.
This is our second Cool Beans release, and based on our learnings from last year, we’ve implemented a few additional steps, to ensure the coffee arrived in tip-top condition. Rather than air shipping right away, the coffee was stored in a climate-controlled cellar, to wait for the cooler months in ATX. We’ve also upgraded the insulated packaging, using an industry-leading packaging manufacturer, who has collaborated with NASA. After arriving at our Austin, TX roastery, the coffee was stored in the freezer - and since it was roasted, it’s been kept cool. The final step, shipping in another insulated box, direct to your door.
We believe that temperature control is the most important variable to control, and this is the most important step in preserving this exceptional coffee for as long as possible.
Finca La Estrella and Lost Origin:
Finca La Estrella is a 7-hectare coffee farm in Alto Quiel, Boquete, that has been run by the Rios Saraceni family since its founding in 1914. It is currently under the stewardship of Giovanna Boutet Saraceni. The farm's legacy began with Antonio Saraceni, an Italian immigrant who arrived in Panama in 1900. With a background in viticulture, he acquired land in Alto Quiel and began cultivating coffee. The farm has been passed down through generations, with each successor being a woman of the Saraceni family.
Lost Origin is the creation of Juan-Andres Typaldos and Franz Zeimetz—self-described “mad‑scientists and craft brewers” based at Casa Bruja Brewery in Panama City. Drawing on their extensive brewing experience, they channeled their expertise into an innovative approach to coffee processing, bringing a creative and experimental spirit to the specialty coffee world.
All Lost Origin coffees are transported in refrigerated trucks to their processing lab. At the facility, each lot undergoes a custom fermentation process using purpose-built stainless‑steel vessels with tightly controlled temperature, pressure, and agitation. After fermentation, the coffee is placed on drying trays and follows Lost Origin’s carefully designed multi-stage drying protocol.
This particular lot, #079‑129, was harvested on December 11, 2024. Upon its arrival at the Lost Origin lab, it was fermented for 4.0 days using custom yeast and bacterial cultures developed by Lost Origin, specifically for coffee. After fermentation, the beans were transferred to a temperature- and humidity-regulated drying room, where they were slowly dried over 36.5 days.
