Finca El Carmen is located in the mountains that surround the beautiful El Pino Lake in Santa Rosa. The farm has been producing coffee since the 1950s but was purchased by Rigoberto Morales Santos in 1970. His son, Ivan, and his grandson, Rigo, now run the farm and have begun cultivating new and exotic varieties, with Pacamara being one of the most successful. Rigo’s idea was to process their Pacamara using the natural process because it highlights the best qualities of the variety.
First found in El Salvador due to a natural crossing between the Pacas and Maragogipe varieties, Pacamara is prized for its big cherries, exceptional cup quality, and complex flavor profile. There is plenty to love about this coffee, with notes of blackberry, sweet spices, and tropical fruits.
