The Story Behind the Bean:
Finca Santa Isabel is currently directed by Luis (Wicho) Valdes. Maturation and drying of coffee are a real challenges for Wicho. There are at least six different flowerings throughout the year and an extended harvest that goes from December to May. The entire wet mill was recently renovated and this specific lot was sorted by density of cherry using Pinhalense machinery with minimal water. This specific lot was mostly mechanically dried and more quality separations were done (removal of floaters) to influence a higher cup quality.
